Chicken Enchiladas

Well after yesterday's disappointment, this one was a hit out of the park. I made Chicken Enchiladas and oh my Lord...were they good. I was skeptical that I was using enough chicken. I slow cooked about six breasts while I slept today just because I always need cooked chicken and I never have any on hand, and it's such a pain in the butt to bake, so I needed some anyway. I only used 2.5 breasts for these and they were still extremely filling. Take a peek.
