Cookies and Cream Oreo Chunk Cookies

I'm sorry for doing this to you.  I know I already have a few other recipes that involve Oreos...and it's really just not nice.

I don't know about you, but I'm ridiculously trying to diet a little bit before I go home for the holidays, just so I can afford to eat the heck out of some Christmas cookies.

But these.  Are.  So.  Good.

Even Cricket likes them!

These are also, yet another variation of chocolate chip cookies.  They've got Oreo pudding (yes that's apparently a thing), chocolate chips, Hershey's Cookies and Cream Drops, and chunks of actual Oreo cookies.  It's sort of insane.

Make them when you have someone to share with.

Cookies and Cream Oreo Chunk Cookies
(adapted from the girl who ate everything, makes about 2 dozen cookies)

1 cup (2 sticks) unsalted butter, softened
3/4 cup packed light brown sugar
1/4 cup granulated sugar
1 (4.2) oz package instant Oreo pudding mix 
2 1/4 cups flour
1 tsp baking soda
2 eggs
1 tsp vanilla extract
1/4 tsp salt
1 cup Hershey's Cookies and Cream Drops, chopped
1 1/2 cup semi-sweet chocolate chips
1 cup chopped Oreos (I used about 8, double stuff)

Preheat oven to 350.  Line baking sheet with parchment.

Whisk together flour, baking soda, and salt in a medium bowl and set aside.

In the bowl of a stand mixer (or using a handheld) cream together butter, brown sugar, and granulated sugar.  Add pudding mix and beat until blended.  Add eggs one at a time, beating after each addition.  Add vanilla, mix on low until incorporated.

Add flour in one batch and mix until combined.  Fold in chocolate chips, candy pieces, and Oreo chunks.  

Using a cookie scoop, place golf ball sized portions of dough on parchment lined cookie sheets.  Place in the center rack of the oven.  Bake 14-16 minutes at 350, or until the edges turn golden brown.  Remove from oven, cool on cookie sheets for about 10 minutes before removing to wire cooling rack.  Store in airtight containers.
